My youngest daughter wanted me to put in her favorite treat for you to try. Enjoy!

Quick Chocolate Cake

  • 1/2 cup butter substitute (oil is fine)
  • 3/4 cup natural unrefined sugar (cane, date, or beet)
  • 2 egg substitutes
  • 1 1/2 teaspoon vanilla
  • 1/2 teaspoon salt
  • 3 teaspoons baking powder
  • 1 1/2 cups brown rice flour
  • 1/2 cup soy flour (or alternate acceptable to your diet)
  • 1 cup milk substitute (rice milk or nut milk)
  • 2 ounces unsweetened chocolate (melted)

Beat the egg substitutes. Blend in the first five ingredients until well mixed. Add remaining dry ingredients alternately with milk substitute. Fold in cooled melted chocolate last. Pour into two greased and lined 8" square cake pans.

Bake at 350F for about 25 minutes.
